Pastariso Brown Rice Penne Pasta
Fresh Mint Leaves
Ruby Red Grapefruits
peeled & segmented
In pot bring water to a boil, add in olive oil and pasta. Boil for 8 minutes or until tender. Drain and rinse pasta with cold water through a colander. Set aside.
In a mini chopper or food processor mince together sugar and mint leaves until finely minced.
Prepare Grapefruit wedges and rinse blueberries
In medium bowl, mix fruit with pasta and add in minced sugar and mint. Lightly toss and place in the refrigerator to chill for at least 30 minutes. Then serve.
