- 8 oz Pastariso Brown Rice Penne Pasta
- 4 qt Water
- 1 Tbsp olive oil
Sauce
- 1/4 cup Granulated Sugar
- 1.4 cup Fresh Mint Leaves
- 2 large Ruby Red Grapefruits peeled & segmented
- 4 oz Blueberries

Instructions
- In pot bring water to a boil, add in olive oil and pasta. Boil for 8 minutes or until tender. Drain and rinse pasta with cold water through a colander. Set aside.
- In a mini chopper or food processor mince together sugar and mint leaves until finely minced.
- Prepare Grapefruit wedges and rinse blueberries
- In medium bowl, mix fruit with pasta and add in minced sugar and mint. Lightly toss and place in the refrigerator to chill for at least 30 minutes. Then serve.
