In medium saucepan bring water to a boil, add in olive oil and pasta. Boil for 12 – 14 minutes or until tender. Drain and rinse pasta with hot water through a colander. Set aside
In large skillet, add ground beef, onion, garlic, salt and pepper, cook over medium high heat until meat is browned and onion is translucent.
In large ceramic or glass baking dish layer in half of the pasta, half of the beef mixture, half of the enchilada sauce and then half of the cheese. Repeat layer then on the top layer add olives and green onions.
Place in oven uncovered and bake in preheated oven for 20 minutes. Remove from oven and let rest for 5 minutes then serve.
